The philosophy of Karmahealth is consume food in the state nature intended, everything in moderation and the quality of what you put in to your body determines the quality of what you will get out of your body.

It appears that ever since we cut fat out of our diets we have all got increasingly unhealthy. A large percentage of us have got fatter than is healthy for us and even those who don't appear to have a weight problem still have chronic health issues.
This continues to be a controversial subject. For so long now we have been told that fat is bad that it has become a part of our psyche and thus a hard one to shift.
A basic understanding of physiology at a cellular level (the starting point) suggests that our cell walls are predominantly made of fat. This is necessary to allow for the transfer of nutrients into the cell and wastes out of the cell. Cells die hourly, daily, weekly depending on where they are located in the body and need to be replenished with new cells. Without the necessary nutrients this can't be done. In addition fats are required for numerous other processes in the body. The end result of a lack of nutritious fat in the diet is the emergence of deficiency conditions ranging from skin disorders to degenerative neurological conditions like dementia.
The other problem is in latter years there has been a softening of the 'No Fat' edict and now we are being told about 'good' fats and 'bad' fats. Now we are getting confused. It appears that 'the powers that be' could have got it wrong - back pedal in progress... To save face, the American Heart Foundation is sticking to its guns on saturated fat and included trans fat in its 'anti' message. Have a look at this www.badfatsbrothers.com

The karmahealth philosophy extolls that in general, everything in moderation, a good variety and in the state nature intended. This is a good rule of thumb to follow when trying to discern the fats you should consume. The fat in meat, fish, dairy and eggs are not something to be feared, in fact it is what sustained generations before us. Combined with other nutrient rich foods such as fruit, vegetables and grains and consumed in moderate serving amounts you are sufficiently nourishing your body. The end result being a body that is able to meet the demands of modern life.
The only fats to be avoided are trans fats. The basic rule of thumb in avoiding them is to not buy packaged food. Most take away foods are included here. Trans fats are created by a process called hydrogenation. This process is employed by food manufacturers to convert liquid oils to solid fats in order to get the right consistency in foods like pastries, biscuits and cakes. It is also used to improve the stability of vegetable oils thus ensuring a longer shelf life. It is important to add here that trans fats are naturally occurring in small amounts in some natural food. However, as is usually the case when it is naturally occurring, it does no harm and in some cases is beneficial to our health, as opposed to human interference and/or addition of synthetic ingredients.

A great book to have a look at is "Fat: An appreciation of a misunderstood ingredient" by Jennifer McLagan. It contains sensible information and lovely, nourishing recipes.
